Ingredients:
- 8 oz pasta of your choice
- 1 bunch asparagus, trimmed
- 1/4 cup sun-dried tomatoes, chopped
- 1/3 cup pesto sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for garnish optional
Instructions:
Turn on the oven and heat it up to 400F 200C
Spread the asparagus on a baking sheet and season it with salt and pepper
Add 1 tablespoon of olive oil and toss it around
For 10 to 12 minutes, or until soft and slightly charred, roast the asparagus in an oven that has already been heated
While the asparagus is roasting, cook the pasta until it is al dente according to the directions on the package
Remove the water and set it aside
Set the big skillet over medium-low heat and add the rest of the olive oil
The pasta should be cooked
Add the sun-dried tomatoes and pesto sauce
Cook, stirring every now and then, until everything is hot
Put the asparagus in the pan with the pasta when it's done
Cut it up into small pieces and add them
Sprinkle to mix
If you want, you can top the hot pesto pasta with grated Parmesan cheese and serve it with roasted asparagus and sun-dried tomatoes
